Citrus Honey Roasted Carrots make for an easy side dish for any dinner or occasion. Tossed with olive oil, salt and pepper, orange zest and honey go on top before roasting to a golden delicious, sticky, caramelized finish.
How to Make Citrus Honey Roasted Carrots
While you can easily use regular carrots, these rainbow colored beauties from the farmers market were screaming to be picked up.
A bright citrus and honey glaze were just the ticket to elevate these and make the perfect side dish for dinner.
- Preheat the oven to 400°F.
- Toss with olive oil, kosher salt and black pepper.
- Line a tray with parchment paper and spread the seasoned carrots out, not overlapping.
- Zest half of an orange over the carrots and drizzle with 2 tablespoons of honey.
- Roast for 15-20 minutes, depending on size of carrots, and they are done.
Do Carrots Have to be Peeled before Roasting?
It’s a preference thing really. I do, but a long as the carrots are washed and clean of any debris you are fine to use unpeeled.
I zested the other half of the orange and drizzled some more honey on top after roasting.
These honey roasted carrots are a fantastic and easy to make vegetable side dish, perfect for any dinner or holiday table. I love the sticky sweet honey, the citrus zest brightens it up and the aroma is wonderful.

Citrus Honey Roasted Carrots
Ingredients
- 2 lbs long carrots
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 4 tbsp honey (separated)
- 1 orange (2 tbsp, zest only)
Instructions
- Preheat the oven to 400°F.
- Peel and trim the ends of each carrot. Toss with olive oil, kosher salt and black pepper.
- Line a tray with parchment paper and spread the seasoned carrots out, not overlapping.
- Zest half of an orange over the carrots and drizzle with 2 tablespoons of honey.
- Roast for 15-20 minutes, depending on size of carrots. Zest the other half of the orange and drizzle the remaining honey on top after roasting. Serve immediately.
