Healthy shrimp stuffed avocado is an easy appetizer or light lunch. A delicious filling of bay shrimp, crunchy vegetables and sweet mango. Check out the video in the recipe card to see how easy these are to make!
Who could resist being served one of these (or like we do, two of these)? I mean it’s a perfect way to get fruit, crunchy vegetables and spicy goodness all wrapped up in avocado, and there’s no heavy mayonnaise.
Nope, just mashed avocado and lime juice get the right consistency to hold all the bay shrimp filling together. These are so darn good.
Shrimp stuffed avocado
A perfect light and refreshing lunch or appetizer, this tropical influenced lunch is a quick one to make. The sweet mango plays well with the shrimp and I love the crunchy vegetables all mixed with the avocado and lime juice.
Sometimes I skip the avocado boat and just pile it on a plate with sesame crackers as a dip. This goes quickly, so make enough.
We usually eat one avocado each, so that’s two halves of these beauties and it’s a great start as the bavette steak is on the grill.

I’d love to make lunch of these this very moment! What a heavenly combination of flavors!!
I love all the flavors and textures… so good!
I love stuffed avocados, but why haven’t I made any for a long time? Thanks for this reminder, Kevin!:) The combo of avocado, shrimp, and mango is fantastic.
Thanks Ben! This is great on toast too, or in your case crostini! 🙂
This recipe makes me ready for the summer weather to get here! Thanks for the unique idea on how to use an avocado!
You bet, thanks Kevin!
mango shrimp and avocado are three super foods that are incredible together, so obviously this recipe is making me drool! Stuffing avocados is the best way to eat ’em!
I agree, this combination is a win! Thanks Bethany. 🙂
Gonna kick up my boring lunch with these beauties this week!
I think you’re really going to enjoy these Kathi!
“Tonight, tonight, it all begins tonight!” Thanks, Kevin. Much love to you and David!
Yay! So glad to read this! Enjoy you guys. 🙂 xoxo
Hi Kevin. What a beautiful presentation for the start of a nice dinner. I could also see serving this is butter lettuce leaves as an appetizer.
Thanks Dorothy! Fresh and perfect for a starter, right? I love the sweet and tangy mango and crunchy vegetables that get the creamy avocado and lime mix. So delicious! Your idea using the butter lettuce sounds like a good one ot me and reminds me of another salad I might make this weekend. Will have to check out butter lettuce at the market. Cheers to a great weekend for both of you! 🙂
This would indeed be a fabulous appetizer or first course. What wonderful. Flavors.
Thank you Mimi, I love it with papaya as well if mango isn’t your thing. Cheers!
You’ve sold me on these! The balance of flavors and textures looks spot-on. This would also be a perfect lunch – I’d be a happy girl digging into a couple of these! I love your presentation in the avocado skins too!
Thank you Faith 🙂 I love the sweet, tart, creamy, crunchy of it all!
Wow! This, indeed, would be a lovely starter before steak! I loves me some avocado, but don’t think I’ve ever stuffed them. I like your idea of skipping the avocado and having with crackers, but the avocado definitely adds a special touch, especially if serving this to friends or family over for dinner. Pinned! This would be perfect once the weather warms and it’s grilling season 🙂 Have a lovely weekend, Kevin!!
What’s funny is I didn’t like the lighting when I made the first video so I made it again and we had this one a third time two days later at Dave’s request. So good!
Have a wonderful weekend Dawn and thanks so much! 🙂
