Chocolate Truffles

If you’re a chocoholic like myself, the chocolate truffles carried by Costco called Chocmod Truffettes are melt in your mouth amazing. Rich dark chocolate shaped like pudgy triangles, dusted with cocoa powder. They’re something I look forward to seeing each holiday season. Luckily, or is it strategic marketing, I don’t know, they come in packs of two!

Now after several endeavors to replicate, I believe I have a worthy Costco Chocmod Truffettes Copycat, at least that’s what all of my different taste testers have told me!

I also dismissed the need to shape them. Keep it simple I say.

So today I am happy to share with you… my easy Chocolate Truffles recipe for your holiday confection consideration!

ingredients and step by step photos to make chocolate truffles

These could not be easier and to keep it that way I decided NOT to roll them and get all messy. These are perfectly fine cut into squares then dusted with cocoa powder, and truth be told, I could make them smaller, but you know you’re going to have at least two of these once you’ve tried them, so I cut them into 36 squares.

What’s in a truffle?

It’s basically a chocolate ganache that gets rolled and coated in different confections like cocoa powder, sprinkles, nuts, etc. There are only a four ingredients in these like a good dark chocolate (I used a 70% cacao bars), heavy cream, butter and flavoring of choice (vanilla, peppermint, orange extract).

That’s it!

How to make Chocolate Truffles

  1. Start off by cutting your dark chocolate bars into small pieces.
  2. Heat some heavy cream, butter and extract of choice and pour it over the chocolate. I’ve used vanilla, orange, and for these holiday chocolate truffles, I used peppermint.
  3. Allow to rest and melt for a minutes and start stirring. It may look like it’s super loose, but give it a minute and keep stirring. It thickens and gets darker, trust me.
  4. Pour this into a 9×9″ lined baking dish. Drop it gently on the counter top to level out and pop it in the freezer for a few hours.
  5. Lift out of pan, dust with cocoa powder and cut into squares. Serve at room temp and store in an airtight container in the refrigerator.

For other chocolate treats, try my Chocolate Macadamia Nut Tart, Chocolate Creme Brulee, Caramel No Bake Chocolate Cookie Bars, Creamy Chocolate Pumpkin Pie or these Peanut Butter Chocolate Rolls. Enjoy!

Servings: 36
Prep: 12 minutes
Cook: 3 minutes
Freeze Time: 3 hours
Total: 3 hours 15 minutes

Ingredients

Instructions

  • Start off by cutting your dark chocolate bars into small pieces.
  • Heat the heavy cream, butter and extract of choice until about a simmer. (See Note 3)
  • Pour it over the chocolate. Allow to rest and melt for a minutes and start stirring. It may look like it's super loose, but give it a minute and keep stirring. It thickens and gets darker, trust me.
  • Pour this into a 9x9" lined baking dish (parchment paper, not wax paper). Spread chocolate evenly in dish. Tap the dish gently on the counter top to level out the top of the chocolate and pop it in the freezer for 3 hours uncovered.
  • Lift out of pan, dust with cocoa powder and cut into 36 to 64 squares depending on the size you like. (See Note 4)
  • Serve at room temp and store in an airtight container in the refrigerator.

Notes

  1. 1 use dark chocolate bars. Be sure it's 60% cacoa or higher. The better the chocolate the better the truffle (I used 70% cacoa in this one). Chop into small pieces to melt easier.
You can substitute 3 1/3 cups chocolate chips (each 100gm chocolate bar is about 2/3 cup), which typically have stabilizers in them, but the quality is different.
  2. I've used vanilla, orange extract, and for these holiday chocolate truffles, I used peppermint extract.
  3. Do not over heat your cream past 170°F. I have in the past and it was too hot and the chocolate split. I continued to stir but it appeared oily. I fixed this by using my trusty hand blender and emulsified the chocolate back to creamy ganache life.
  4. I keep dipping and wiping dry my chef knife in hot water while slicing to keep the cuts clean.

These are tasty, but they are really soft. Wondering what I did wrong. I find that if I keep them in the freezer, they melt in the mouth and have the consistency of what I would expect (from past experience) them to be if just refrigerated.

    1. Yes, it’s 500 grams total. Which is 17.6 ounces. There are so many sized bars of chocolate, just go by weight Nellie.

Genius! I have avoided making truffles because they re so fussy. What I like about your recipes is the ease of preparation. I make a version of this using unsweetened chocolate, sweetened condensed milk and what ever flavoring. My go to when I crave chocolate. You are exactly right. One Neds to keep mixing, and suddenly it will come together and be very smooth. I will try this in a square pan. Mine is 8″ so will be thicker. Tow bites in one!

    1. I forgot to add that I often put add-ins. And these would be perfect for adding in chopped nuts, dried fruit, coconut, etc.

    Kevin:
    These are so so good!
If I don’t leave them alone there won’t be any left for Christmas.
My grandson says these are a keeper and I agree.
    Thanks for the recipe.

Goodness gracious, chocolate nirvana is right! These truffle squares look dangerously delicious! And I can’t believe how easy they are to make! I’ll have to make a double batch – one for hoarding and one for gifting! Pinned!
