Apricot Chipotle Sauce
This is amazing and super easy to make, too.
Over medium heat in a skillet at the oil and sauté the onion until translucent and slightly golden, about 5 minutes.
In a bowl mix together the apricot preserves, mustard, ketchup, chipotle peppers, vinegar, Worcestershire sauce, salt, pepper and garlic powder.
Pour sauce over the sautéed onions and cook for 5 minutes on low. Set aside.
This is great for quick appetizers whether using fresh or frozen meatballs, grilled or pan seared chicken and fantastic basted on ribs for that sticky sweet goodness.

I really liked it. I added some ground red pepper for more of a kick. I think the only thing I would differently is add less ketchup. Other than that, I’ll definitely make this again!
Good thinking on how to give it more of a kick!
