Soft Pumpkin Snickerdoodles

OK, so I was asked to make up a little sweet treat dessert for a party and decided on these Soft Pumpkin Snickerdoodles. Quick, easy to make and influenced by the pumpkin puree I had on hand, these are a delicious take on the snickerdoodle.

I use the balance of the pumpkin puree for this in other recipes like breakfast shakes or overnight oatmeal. Don’t let anything go to waste!

These Soft Pumpkin Snickerdoodles are so soft and that wonderful crunch you get from the glazed cinnamon sugar on the outside is perfect. The pumpkin morsels add such a fun addition to punctuate the pumpkin purée in the dough itself. I picked them up at Target over the holidays as I knew they would come in handy, but you can easily find them online, too.

Whenever we get invited to go to a party or dinner I usually get asked to make some sort of dessert, which is no problem. I try to make something different like my Blueberry, Strawberry, Goat Cheese and Basil Tart or these crazy No Bake Salted Caramel Malted Chocolate Cookie Bars.

Soft Pumpkin Snickerdoodles

Who could resist soft pumpkin snickerdoodles cookie? By adding some pumpkin puree and pumpkin chips to the dough, you have a wonderful little cookie.
Servings: 24 servings
Prep: 15 minutes
Cook: 14 minutes
Total: 29 minutes

Instructions 

  • In a medium bowl, whisk the melted butter, sugars, vanilla and 1/3 cup pumpkin puree (I use the balance of the pumpkin puree for this in other recipes like breakfast shakes or overnight oatmeal. Don't let anything go to waste!) until smooth. Set aside.
  • In a large bowl, sift together the flour, salt, baking powder, baking soda and cinnamon. Pour wet ingredients into the dry and mix together. The dough will be very soft. Fold in the pumpkin chips.
  • Preheat the oven to 350°F. Line two baking sheets with parchment paper or silicone baking mats. Mix together the other 1/2 cup of granulated sugar and teaspoon of cinnamon.
  • Roll the dough into 24 balls, around 1 1/2 tablespoons of dough each. Roll each of the dough balls in the cinnamon-sugar mixture and arrange on baking sheets. Bake the cookies for 14 minutes.
  • Allow the cookies to cool for at least 10 minutes on the cookie sheets before transferring to a wire rack.

Notes

  1. Substitute Pumpkin Butter for the Libby’s 100% pure pumpkin for an extra punch of holiday flavor. You’ll need 1/3 cup of this for the recipe. I use the balance of the pumpkin puree for this in other recipes like breakfast shakes or overnight oatmeal. Don’t let anything go to waste!

    I’ve never made snickerdoodles of any sort but these look soft and delicious! I always thought they were hard for some reason…

  5. I love pumpkin too, and enjoy it pretty much year round and Kevin – these here cookies are simply fantastic! I am drooling over the double dose of pumpkin puree and pumpkin morsels! Mmmm heaven! And the crunch from that cinnamon sugar – oh – my heart is pitter pattering like some gals do when they see diamonds! Since Dave is a type 2 diabetic and you are looking for a guinea pig aka taste tester for your cookie creations (other than those times you have them at y’alls parties) then I’d like to volunteer my unbiased taste testing abilities! Fur real! 🙂

  6. Hey Kevin! My son’s all time favorite dessert has always been pumpkin bars and I know he will love these (me too)! I’ve seen pumpkin chips, but only around Thanksgiving. I will definitely make these gems when I get my hands on the chips! One of Gary’s favorites is pumpkin pie (any time of year), so I always have a can or two of puree in the pantry.     1. Hi Dorothy! I was never a big fan of the pumpkin until just a few years ago. Yams and sweet potatoes, too. Funny how your tastes change as you grow. These are easily a new favorite. Walmart and Target carry the pumpkin chips, not sure if completely seasonal though. I grab a bunch just in case whenever I can get them. Hope Gary is doing well. Have a great day out there!     First of all, I can’t believe John (He Needs Food) has never tried a snickerdoodle! They were a huge part of my childhood. My mom found the biggest, puffiest snickerdoodle cookies at a local bakery and these seemed to always be on hand. In fact, I’ve had a very hard time replicating that same cookie. I happen to also have some pumpkin puree in the house, not sure if I can score pumpkin chips though, and since I’m hosting a family party this weekend, these would be a perfect counterpart to the “Chocolate Salami” (yes) that I’ll be serving.     1. Sorry in the late reply here Sally. I never had a snickerdoodle until about 5 years ago myself. LOVE them, cookie or bar form. These are great with white chocolate chips, too.   9. Hi Kevin! These look delicious! In my opinion, pumpkin is not last season. If you enjoy something, you enjoy it, right? Who cares if it is not the ‘it’ flavour at the moment 🙂 And, if people complain, so be it…more for me, lol! Love pumpkin puree and could possibly put it in everything from sweet to savoury. And I’m totally with ya, don’t let anything go to waste. I sometimes find it hard cooking for just hubby and I and we usually have leftovers that we are eating for a couple of days. If it’s something I get tired of eating leftovers of, then I’ll usually just freeze for later, but I can’t stand wasting food. I’m been craving something sweet lately and I think these cookies will fit the bill perfectly! There’s a can of pure pumpkin puree at home just waiting to be used. Pinning, of course.     1. I must say I was holding on to the post for a while because I felt the season for it had passed and thought, what the heck – post it! I have really grown to love pumpkin and these are really tasty, soft and flavorful. Plus I love to say snickerdoodle. 🙂
      You got me thinking and I looked in the freezer and I have like 4 great dinners I could thaw. I’m with you, nothing goes to waste and sometimes these recipes make enough for 4-6 people and you can have only so many leftovers. Hope you give these a try. Thanks Dawn!

  10. The name snickerdoodle always makes me chuckle. Not because of the doodle reference, it’s just a funny sounding name to give to something. I’ve never tried one, either, and I’ve just learned about a new ingredient. Pumpkin chips!

These were probably the most asked for and enjoyed dessert the last 2 times I went to these friends of ours house and they go quickly. I am a true chocoholic and these were superb, so I hope that counts for something.
