Savory Egg Clouds

What would you say if you could have a little slice of heaven in under 10 minutes? Well these impressive Savory Egg Clouds are your ticket! Start your oven, break out a whisk and get ready for an impressive breakfast that’s sure to wow your family and guests.
I came across this video the other day and was amazed at how easy, quick and minimal in ingredients this incredible breakfast was to put together.
Who can’t whisk a couple egg whites, pop a few slices of bacon in the microwave for a minute or two and crumble? After the egg whites are beaten to stiff peaks, the bacon, cheese and chives are folded in and popped in the oven for 3 minutes!
I mean come ON!
After 3 minutes you drop one yolk per egg cloud on top and back in the oven for another 3 minutes. OK, so who is with me?
When I pulled the final version from the oven I was blown away at how easy it was and how impressive they looked. Like something you spent a lot of time on, but didn’t. No one needs to know, it’s our secret.
These will surely wow your special someone this weekend, or for the family brunch served with fresh fruit. Enjoy!
Separate the yolk from as many egg whites as you are going to be making clouds. This is for 1 egg per person. Be sure to keep yolks separate. In a chilled bowl, using an electric mixer or whisk, beat the two egg whites until stiff peaks form. With a rubber spatula, fold in the crumbled bacon, cheddar cheese, chives, salt and pepper.
Spoon the whites into even piles on a parchment lined baking sheet and create a well in the center of each pile with the back of the spoon. Bake at 450°F for 3 minutes. Remove from oven and place a yolk in each well, bake for another 3 minutes at 450°F and serve. Enjoy!

- 1/2 cup cheddar cheese shredded
- pinch of salt
- fresh cracked black pepper

This recipe is a keeper. This will be great for serving breakfast to overnight guest. Would also be great served on a green salad with a light vinaigrette for a luncheon.

Second time I made this! Easy and so yummy! Looks like something from a fancy restaurant. Didn’t have chives so used green onions. Also after you chill the bowl for the egg whites, place the bowl in a larger bowl filled with ice. The whites come out great! This is a keeper recipe for sure!

You don’t need the microwave, you can always pan fry the bacon. I’ve been trying to keep recipes to a limited amount of time and this worked. I usually pan fry bacon so I can have the rendered fat for other cooking uses. Thanks for stopping by Mimi!

How fun is this? I often scramble on egg and eat that with a piece of toast for lunch. (There’s something about a hot lunch once it starts to get cold outside.) But now I want to give this a shot.
