I came across this video the other day and was amazed at how easy, quick and minimal in ingredients this incredible breakfast was to put together.

Who can’t whisk a couple egg whites, pop a few slices of bacon in the microwave for a minute or two and crumble? After the egg whites are beaten to stiff peaks, the bacon, cheese and chives are folded in and popped in the oven for 3 minutes!

I mean come ON!

After 3 minutes you drop one yolk per egg cloud on top and back in the oven for another 3 minutes. OK, so who is with me?

When I pulled the final version from the oven I was blown away at how easy it was and how impressive they looked. Like something you spent a lot of time on, but didn’t. No one needs to know, it’s our secret.

These will surely wow your special someone this weekend, or for the family brunch served with fresh fruit. Enjoy!

Separate the yolk from as many egg whites as you are going to be making clouds. This is for 1 egg per person. Be sure to keep yolks separate. In a chilled bowl, using an electric mixer or whisk, beat the two egg whites until stiff peaks form. With a rubber spatula, fold in the crumbled bacon, cheddar cheese, chives, salt and pepper.

Spoon the whites into even piles on a parchment lined baking sheet and create a well in the center of each pile with the back of the spoon. Bake at 450°F for 3 minutes. Remove from oven and place a yolk in each well, bake for another 3 minutes at 450°F and serve. Enjoy!

This recipe is a keeper. This will be great for serving breakfast to overnight guest. Would also be great served on a green salad with a light vinaigrette for a luncheon.

  2. Second time I made this! Easy and so yummy! Looks like something from a fancy restaurant. Didn’t have chives so used green onions. Also after you chill the bowl for the egg whites, place the bowl in a larger bowl filled with ice. The whites come out great! This is a keeper recipe for sure!

    1. Aren’t they simple to make and deliver a WOW when plated and served? Love these, too! Thanks Trina!

  3. Wow! Definitely pinning this to do a trial run on a weekend. I’ve never seen anything like this, excited to try it!

    1. You don’t need the microwave, you can always pan fry the bacon. I’ve been trying to keep recipes to a limited amount of time and this worked. I usually pan fry bacon so I can have the rendered fat for other cooking uses. Thanks for stopping by Mimi!

You stinker, I’ve been wanting to make these for awhile now and looking at your version of this fun recipe, I’m glad I waited. Love the savory additions, thanks for timing this post perfectly for the weekend. 🙂 Have a great one.

    1. Thanks Sally, it’s a really easy and tasty one for sure and you will not be disappointed. We actually had it twice. 🙂

  5. Hey Kevin! You had me with the name of this recipe! Our chickens are molting so we’re not getting as many eggs, but what we do get I am using judicially! I believe this qualifies! Have a great weekend! 🙂

  6. Ohh, Kevin I love these! I’m a HUGE fan of eggs, so I am ALWAYS looking for new ways to devour them! These are perfect! Love that they are gorgeous AND super easy! That’s winning for sure! Definitely going on my breakfast rotation! Pinned! Cheers buddy- to a stellar weekend!

    1. Thanks Cheyanne! For being as simple and easy they are quite a nice dish to present – especially one that looks like you did more work than you really did! I’m not usually a big breakfast person, but we did these twice this past weekend. 🙂

  7. How fun is this? I often scramble on egg and eat that with a piece of toast for lunch. (There’s something about a hot lunch once it starts to get cold outside.) But now I want to give this a shot. I’ve never thought about whipping that egg white to stiff peaks before cooking it. Great idea!! #WolfpackHeaven
