I love to add apples to salads, chicken dishes and roasted vegetables. Here they get shredded and added to the oatmeal cookie dough. I decided to add a bit of the Fall and East coast to the cookie with a nice maple flavored glaze. These are great to have on hand during the holidays for houseguests and late night nibbles. 🙂

Apple Oatmeal Cookies

This one comes to you from a friend of mine some of you may know. Dorthy lives in Tennessee with her husband Gary and is a frequent visitor and commenter here. I love how food can bring people together and I met her here from my site. I first saw her on other friend’s site’s and then she found her way over to mine and the interaction and conversations with her are always fun.

She is always a positive, bright spot in the morning as I read her comments. It’s interesting to read someone’s comments and have an image in your head of what they look like and then actually see a picture of them. A year ago I sent her a photo of myself with Nagi from RecipeTin Eats and Marissa from Pinch and Swirl when we all met for the first time at the Food Blogger Central conference. Soon thereafter she sent each of us a photo of her and her husband. It was great to put a face to the name and words. So when my friend Nagi visited at my home last May, we decided ring Dorothy up and say hello. What a fun lady! On their property they grow lots of food, preserve and pickle. She is such a fun spirit.

She really liked my Baked Hasselback Apple I posted a few weeks ago and mentioned she wanted more apple recipes. Later in an email, she shared with me an apple cookie recipe she makes for Gary and here is my take on it for you guys.

I thought of another fellow food blogger she also often comments on, Dave over at Spiced, and used a little maple syrup he turned me on to not long ago for the glaze. I ordered some on my own, not THE same one, that would be old by now, anyways…

While the original recipes hails from Live Well Bake Often, I decided to shred the apple instead of dicing it and added the maple glaze. When I make these I think of Dorothy and hope you will as well. Enjoy!

I made these exactly per the recipe. Delicious!! I was tempted to add dried cranberries
or raisins, but didn’t want to experiment before following the recipe. Everyone LOVES these – moist, not too sweet and just the right amount of spice.

I wish I would have made a double batch!
    Thanks!

    1. Aren’t these good? So happy you tried them and loved them as much as we do Janet. I also like your cranberry idea, might have to try that myself! 🙂

  2. Oh yeah! I love what you did here with the maple syrup, Kevin. 🙂 You know I’d be all about some maple oatmeal cookies…those bad boys wouldn’t be safe in our house. (We’re actually on a diet around here right now, so it’s a very good thing these aren’t sitting on my counter tempting me!) Don’t you love Dorothy’s recipes? She’s got some great ones!! In fact, I have a fun one of hers coming up in a week or two. Thanks for the shout-out, and I’m definitely going to be making a batch of these cookies once the diet is over!!

    1. The little bits of apple are my favorite. These would perfect to snack on as you guys hike through the Parque Nacional Torres Del Paine! 😉

  3. I too have my menu planned but Id like to add these to the morning after menu. My overnight guests could serve themselves breakfast while I can sleep in. GREG

  4. How sweet!! One of the things that I didn’t expect when I started my blog was all the wonderful people I would meet and how many friendships would be made (and that includes you, of course 🙂 ). That’s probably my favourite thing about blogging so it’s so nice that you actually got to meet someone through that. These oatmeal cookies sound scrumptious, Kevin and a glaze is certainly just the way to really amp up the flavour and you really can’t go wrong with maple and apple, can ya? Pinning these and trying soon. Hope you’re having a lovely week!

    1. Thank you Dawn, I agree! So happy to have connected with you. It’s also so fun to finally meet in person at different events, too. We are up in Beavercreek outside of Portland, Oregon with family. I love it up here as it’s so different from San Diego and Dave’s family is the best. 🙂 I want to move here one day, our two dogs would love the countryside and hiking. 🙂

  5. Hey Kevin! Many thanks for your kind words my friend! Seeing these I want to make a batch. However, since I still have more sides and desserts to make for tomorrow I think I’d best keep to my schedule! Wishing you and Dave a most Happy Thanksgiving! 🙂

    1. Oh Dorothy, you’re a gem! Just love our friendship over the years and sharing of thoughts on food and recipes. I’m with you, if I don’t stick to my list then I get side tracked. We are up in Beavercreek now with family, and for a pre-Thanksgiving dinner with some family who can’t make it for the big day, making my Cranberry Turkey Meatballs and other delicious sides. I made 70 meatballs yesterday alone, lots more to do today. Should be so fun. Happy Thanksgiving to the two of you and I hope you are surrounded with family, friends and lots of love. 🙂

    1. Thanks for stopping by and the kind words Connie. These are super good (I love the maple glaze add). A Happy Thanksgiving to you and your family.

I like apple cookies, and you’ve got the cute ones, Kevin! I’ve made similar few times (I don’t add sugar at all or add just a little of maple in the dough, though). Besides being delicious and moist, I consider these a healthier option so it’s ok to grab more than a few, right?:)

  7. Another great one Kevin , l love apple so much 🙂 especially with oatmeal yum yum , this is pinned! And yes I see Dorthy’s name often here and on Nagi’s too, people who food are the best, aren’t they 😉
