This blackened mahi mahi is made with a traditional blackened seasoning mix of paprika, cayenne pepper, ground ginger, black pepper, oregano, fennel seeds and clove. Best part is this is on the table in a flash! 🙂
So after a weekend of grilling, sometimes a lighter dinner is in order and that’s exactly what today’s recipe is all about.
Blackened Mahi Mahi
Mahi Mahi is a fairly neutral flavored fish, is meaty and flakes apart easily if cooked properly. It can often times be called dorado as well.
How to cook Mahi Mahi
A quick grilling works 4 minutes per side as does popping it in a 375°F oven for 8 minutes. I’m going the cajun route with this and frying in a super hot cast iron pan.
My go to way to get the flavors going is to blacken it with my Blackened Seafood Seasoning blend with a little butter, pan seared to perfection, about 2-3 minutes per side.

Keeping it light, I served this Blackened Mahi Mahi over steamed rice, salad and lemon slices.
The best part of cooking with fish is that is is a quick meal top prep and execute. The fish cooks in less time then it does to steam the rice!

Blackened Mahi Mahi
- 1 lb fresh mahi mahi
- 2 1/2 tsp blackened fish seasoning (See below recipe)
- 1/4 cup melted butter
Blackened Fish Seasoning
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp cayenne pepper
- 1/4 tsp ground ginger
- 1/4 tsp black pepper
- 1/4 tsp oregano
- 1/4 tsp fennel seeds
- 1/8 tsp ground clove
- Rinse the fish and pat dry with paper towels.
- In a small bowl mix together the spices and set aside.
- Place a frying pan or cast iron skillet over high heat until it starts to smoke. Keep kitchen area well ventilated.
- Toss the mahi mahi in melted butter and then coat with spice mixture on both sides. Press spice mixture to adhere.
- Immediately sear on high heat 2-3 minutes per each side or until desired doneness is reached and center is cooked. Don't overcook as it will dry out. Serve immediately with slices of lemon and steamed rice.
