I was looking for a very moist bran muffin and saw your recipe for your Super Moist Bran Muffins. I’m looking forward to trying your recipe with butter milk and apple butter. From the reviews I’ve read, I believe your moist muffins are exactly what I’ve been looking for!
Also, I have several chocoholics among my family and friends and was wondering if this same recipe is good for making chocolate muffins as well. If so, how much unsweetened cocoa powder should I use?

Love your recipes. I made my first pork shoulder 6 pounds one month ago for 4 hours. I live in a new apartment, state of the art ventilation 16 ft. ceilings and great kitchen. I had a smell (very unpleasant) that lasted 3 weeks and there are still moments. I tried boiling coffee grounds for hours, lemon and oranges, cinnamon with nutmeg cloves. Burned candles hours on end. Nothing took the smell away. I want to try your pork recipes. Any suggestions would be greatly appreciated!
Strange indeed Stuart. I would try one or two small bowls of vinegar and set them about. I remember my mom used to do that for cigarette smoke in the house. Other than that I would check the ventilation system. Are there filters? Is it working properly? I recently got a new house and it sounded like the air conditioner was on, but it never kicked on the generator outside to cool things as there was a blown fuse. Might ask?
Thanks for the discussion on Cajun/creole cooking. I want to point out one error in your recollection of creole history. That is, the original Creoles were not descendants of the Cajuns — but were the name given to the early White immigrants specifically from France (which precedes the Acadiana diaspora). Black creoles come from this group.

Just discovered this site. Recipes look great can’t wait to try some. The one thing that bothers me is the video, don’t get me wrong I do enjoy seeing instructional videos but these videos take up half of my screen can’t seem to shrink or close it. Therefore can’t see the recipe under the video. Help!!! Thank you.
