Pecan Almond Chocolate Chip Truffles

These Pecan Almond Chocolate Chip Truffles are a confection of ground almonds, pecans, dates, chocolate chips then rolled and dipped in melted chocolate.

  • 1 cup raw unsalted almonds
  • 1 cup raw unsalted pecans
  • 8 Medjool dates pits removed
  • 1/2 tsp kosher salt
  • 2 tbsp water
  • 3/4 cup mini chocolate chips
  • 12 oz chocolate for dipping
  • sea salt flakes


  • Place the almonds and pecans in a food processor and pulse for two minutes to start breaking down the nuts to a meal like consistency.
  • Remove the pits from the dates and discard. Add the dates, water and kosher salt and pulse again for a minute or two until the dough comes together. Pour this mixture into a bowl and stirĀ in the mini chocolate chips.
  • Dip a cookie scoop into a glass of water, shake off excess water and scoop the dough into balls. Press with hand to fill and compact the dough in scoop. Place each mound on a lined cookie sheet that can fit in your refrigerator. Repeat until all dough is used and refrigerate for at least one hour to firm up.
  • Remove from refrigerator and dip in melted chocolate. Place on lined baking sheet and top with sea salt flakes. Keep refrigerated in an airtight container until serving.
