These pecan almond Chocolate Chip Truffles are a confection of ground almonds, pecans, dates, chocolate chips then rolled and dipped in melted chocolate. Prep time includes 1 hour refrigerating the dough.
Place the almonds and pecans in a food processor and pulse for two minutes to start breaking down the nuts to a meal like consistency.
Remove the pits from the dates and discard. Add the dates, water and kosher salt and pulse again for a minute or two until the dough comes together. Pour this mixture into a bowl and stir in the mini chocolate chips.
Dip a cookie scoop into a glass of water, shake off excess water and scoop the dough into balls. Press with hand to fill and compact the dough in scoop. Place each mound on a lined cookie sheet that can fit in your refrigerator. Repeat until all dough is used and refrigerate for at least one hour to firm up.
Remove from refrigerator and dip in melted chocolate. Place on lined baking sheet and top with sea salt flakes. Keep refrigerated in an airtight container until serving.
