Black Bean Beef Stir Fry with Celery is a simple, quick and delicious dinner made with black bean paste as the sauce base, rice vinegar, fresh minced ginger and other spices.
In a bowl whisk together the garlic, black bean paste (sometimes labeled a sauce), rice vinegar, minced ginger, red pepper flakes, soy sauce and sesame oil.
Slice the beef into thin strips and add to the marinade. Toss to coat and allow to marinate for 15 minutes, covered.
Slice the celery into 1 inch pieces on the bias. Slice the onion in half and then across into 1/2 inch strips. Set both aside in a bowl.
Get a wok screaming hot and add the beef mixture to the pan in small batches to sear and caramelize, not steam. After each batch is browned, set aside and continue searing beef until all is completed. Set aside.
In the same wok add the celery and onions. Toss to coat and scrape up any bits and sauce left over from the beef mixture for several minutes. Add the beef mixture back into the vegetables and toss to incorporate.
Add the beef stock and stir fry quickly. A sauce will coat the beef and vegetables. Sprinkle with sesame seeds and season to taste with salt if needed.
