A sweet and delicious sauce

- 1 1/2 cups white sugar
- 1/4 cup water
- 8 tbsp butter cubed, room temperature
- 3/4 cup heavy cream room temperature
- 1/4 tsp vanilla extract
- 1 tbsp sea salt flakes
Add sugar and water to a heavy bottom stainless steel pot. Stir to combine. Over medium high swirl pot to mix and cook for 12-14 until a golden caramel color. Be sure to watch it carefully so it doesn’t burn.
Turn heat down to low and carefully add the butter and whisk until thoroughly combined. Next add the heavy cream and whisk thoroughly and vigorously. This will bubble up so be careful.
Remove from heat and add the vanilla and sea salt flakes, whisking again to thoroughly mix in.
Allow caramel to cool before pouring in clean, sealed containers and storing it in the refrigerator for up to 2 weeks.
