Easy Mexican Watermelon Salad
This Mexican Watermelon Salad starts with chilled, cubed watermelon tossed with lime juice, chili seasoning, crumbled cojita cheese and zest! It's the perfect fruit salad to bring for any Summertime picnic, potluck or your weekend barbecue!

Ingredients

seedless watermelon

limes
juiced and zest
1/2
tsp
salt

chili seasoning
1/4

cotija cheese
crumbled
Instructions
Cube watermelon into 1 inch pieces.
In a bowl add the watermelon, lime juice, kosher sat and chili powder. Toss to coat and refrigerate for at least 1 hour, covered.
Crumble cotija cheese over salad and the zest from 1 lime before serving.
Notes
I'm using a small round watermelon for this, but if you use a large, oblong sized watermelon, I add extra cheese. Season to taste.
