Pierce sweet potatoes with a fork and place potatoes on a lined baking sheet pan. Bake for 1 hour or until tender. Allow to cool slightly and slice potatoes in half horizontally. Arrange cut side up in a serving dish.
Combine butter, honey, and paprika in a microwave-safe bowl. Microwave at high 1 minute. Drizzle honey butter mixture evenly over potato halves. Sprinkle potato halves with cilantro, pomegranate arils and sea salt flakes (optional).
Pomegranate arils and sea salt flakes are optional. Feel free to omit or substitute kosher salt for the flakes.
