Cinnamon Chip Cookie Dough Bars with Chocolate Ganache
These Cinnamon Chip Cookie Dough Bars with Chocolate Ganache are perfection. Each has a firm and delicious cookie dough, the slight crunch of the cinnamon chips and are covered with a chocolate ganache.
Line an 8×8 inch pan with parchment paper and set aside.
In a mixing bowl, mix the butter and brown sugar on medium speed for several minutes until it turns a pale yellow and is fluffy. Add the salt and vanilla and beat until thoroughly combined.
Turn the mixer to low and add the sweetened condensed milk until combined. Next add the flour and mix until completely incorporated.
Remove bowl from mixer stand and using a spatula gently fold in the cinnamon chips.
Press the no-bake cookie dough into the bottom of the lined 8×8 pan. I used a spatula dipped in water to spread it to the corners.
Cover the bars with plastic wrap and refrigerate for 3 hours until firm.
For the ganache, in the top of a double boiler combine the chocolate chips and whipping cream. Place over simmering water and stir often with a whisk until chocolate is melted and incorporated into a thick sauce.
Pour and spread over the top of the chilled dough and chill for 1 hour minimum until firm. Use a sharp knife dipped in hot water and wiped dry to slice into bite size bars.
