Glazed Mint Carrots

- 12 small carrots finger length
- 1/4 cup brown sugar
- 1/4 cup butter
- 1 tsp dried mint
- salt and pepper to taste
Peel and trim carrots leaving tops attached.
Place carrots in a sauté pan and cover with water. Bring to a boil and cook for 2 minutes.
Drain water off and add butter, brown sugar and mint. Shake pan and cook over medium heat while glaze sets up.
Cook for 3 minutes and glaze is thick and bubbling.
Add salt and freshly ground black pepper to taste and serve.
