Glazed Mint Carrots

  • 12 small carrots finger length
  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1 tsp dried mint
  • salt and pepper to taste


  • Peel and trim carrots leaving tops attached.
  • Place carrots in a sauté pan and cover with water. Bring to a boil and cook for 2 minutes.
  • Drain water off and add butter, brown sugar and mint. Shake pan and cook over medium heat while glaze sets up.
  • Cook for 3 minutes and glaze is thick and bubbling.
  • Add salt and freshly ground black pepper to taste and serve.
