Line a baking sheet with a good rim to not allow any spillage or a jelly roll pan with parchment paper.
In a large mixing bowl add the rolled oats, seeds, nuts, your choice of sweetener, both oils, spices and salt. Using latex gloves I mix the granola thoroughly, rubbing the mixture between both hands to coat all with the oils.
For an added crunch I whip a egg white until frothy and pour over mixture. Work in an dmix thoroughly again.
Spread onto the parchment lined baking sheet and spread with rubber spatula to disperse evenly into every nook and cranny.
Bake for 40 minutes. Remove from oven and allow to cool before adding your other flavor additions like the dried papaya chunks, or chocolate chips. I found that dried fruits tend to turn to leather and really stick to your teeth or the obvious, the chocolate will melt.
