This Raspberry Lime Chia Pudding is so good, easy to make and healthy. The chia pudding gets layered with a raspberry, lime and honey sauce with slivered almonds added for a little texture. This makes for a sweet, tangy, creamy and delicious dessert. Prep time does not include 3 hour refrigeration time for pudding to set.
Combine the raspberries lime juice and honey in a small sauce pan and over medium heat cook until all the fruit has broken down. Crush and mash with the berries with spoon. Add the cornstarch and water slurry, stirring often to incorporate. Remove from heat and pour through a sieve to extract seeds, discard. Set the Raspberry sauce aside to cool.
Add the remaining ingredients in a large bowl except for granola. Mix well, cover and refrigerate overnight or at least 5-6 hours.
Scoop a quarter of the chia pudding into each glass dish. Pour a quarter of the raspberry sauce on top and sprinkle granola if you like. Do this twice for each, stacking the ingredients. Serve chilled and enjoy.
