These No-Bake Apricot Nut Bars are made with dried apricots, dates, almonds, almond butter, honey and vanilla, and topped with crunchy flax cereal and more chopped apricots, they sure hit the spot for a for an afternoon energy pick up!
In your food processor chop the apricots, dates, almonds, almond butter, honey and vanilla.
Add a little warm water if needed until all the ingredients come together. Add the oats and salt and pulse until all is mixed.
Scoop mixture out onto parchment paper, top with crunchy flax cereal and 2 tablespoons of chopped apricots. Place another sheet of parchment paper on top and press gently with rolling pin. Roll out to desired pan size of a 9" x 9" square. This is so sticky on it's own I preferred doing it this way. Lift by the parchment paper and drop into the square pan. Remove the top sheet of parchment and discard. Refrigerate for at least 3 hours to firm up and then slice into squares.
