These Peppermint Thumbprints are so soft and delicious. Made in minutes and filled with a chocolate ganache, they are the perfect sweet tooth fix. Adapted from She Wears Many Hats.
In the bowl of an electric mixer whip the softened cream cheese until fluffy, about a minute. Add the peppermint extract and whip to combine.
Gradually add 1 cup of powdered sugar to the cream cheese, beat well until incorporated. Continue with remainder, a cup at a time, until all the sugar is combined.
Using a 2 tsp scoop roll dough into balls and place on baking sheet lined with a Silpat silicone baking matt or parchment. Feel free to roll peppermint dough ball in colored sugar if desired. Using the end of a wooden spoon or your little finger create a small "bowl" in each ball by pressing down in the center. Cover with plastic wrap and let firm up in refrigerator for 1 hour.
Melt chocolate and heavy whipping cream in a glass bowl sitting over a small pot of simmering water, or in the microwave, stirring every 30 seconds until smooth.
Fill a piping bag or squeeze bottle with the chocolate ganache. Fill each peppermint thumbprint bowl with chocolate and let cool.
Refrigerate in airtight container until ready to serve.
