Creamy Chipotle White Cheddar Mac and Cheese with Grilled Hot Dogs
Creamy Chipotle White Cheddar Mac and Cheese with Grilled Hot Dogs - wheat pasta, 3 cheese sauce, minced chipotle peppers gets baked to a golden brown.
Cook pasta in boiling water with salt per package instructions or until al dente. Drain and toss with olive oil to coat, set aside.
Grill the hot dogs or sausage. Set aside.
In a saucepan over medium heat melt the butter, add the flour and whisk to blend. Cook for 2 minutes and slowly add the cream and whisk until smooth. Reduce heat to simmer and add the shredded cheeses. Whisk until smooth. Add the minced chipotle peppers with adobo sauce, garlic powder and salt to taste.
Pour cheese sauce over pasta, toss to coat. Spread evenly in 9”x9” baking pan sprayed with cooking spray.
Preheat oven to 450°F.
In a small bowl mix Panko bread crumbs, parsley and Oregano with melted butter, toss with fork to mix. Spread crumb mixture over pasta and bake for 10 minutes in a 450°F oven or until topping is a golden brown. Serve with as a side dish or on top of your grilled hot dog.
