Cinnamon Apple Oatmeal Carmelitas. Bar cookies made with butter, flour and oats. Caramel is drizzled over a partially cooked dough base and diced apple.
Preheat oven to 350°F. Peel and dice the apples, set aside.
In a small saucepan over low heat melt the caramels and heavy cream, stirring until smooth. Set aside to cool slightly.
Combine in a medium bowl the flour, oats, brown sugar, soda, salt and melted butter to form crumbs. Press half the crumbs into the bottom of a parchment lined 9x9" pan. Bake for 10 minutes. With the remaining crumb mixture I added a half cup of chopped pecans for flavor and texture.
Sprinkle the diced apples over the partially baked crust. Pour the cooled caramel over the apples, sprinkle cinnamon on top and remaining crumb mixture.
Bake for 22 minutes. Allow to set and cool, middle might appear undone, but will set and firm up. Chill bars for 60 minutes for easy cutting.
