This pork sir fry starts with tender, sliced pork sirloin, marinated in roasted garlic and herbs and vegetables coated in a wonderful maple cider glaze!
Slice pork sirloin in half lengthwise and each half in 1/4 inch slices. Toss with oil in a bowl and set aside.
Peel onion, carrot and apple and cut into uniform slices. Chop bell pepper into 1/4 inch long slices. Snap hard ends of asparagus off and discard. Cut asparagus into 2 inch pieces. Trim ends of broccolini stems and slice each piece in half lengthwise.
In a small bowl whisk together the glaze and set aside.
Get a wok or large skillet searing hot. Add the sliced pork and sear to caramelize for several minutes until golden brown on edges and cooked through. Remove from pan and set aside covered to stay warm.
Add oil to pan and add the harder vegetables first: carrot and broccolini, tossing to cook for 2 minutes. Add the remaining vegetables and apple and toss to stir fry for 3 minutes. Add the glaze mixture to the vegetables and toss to coat and thicken. Cover with lid and cook for 1-2 minutes.
Season to taste with salt and black pepper if needed and serve on platter topped with cooked pork slices. Sprinkle with chopped cilantro (optional) and serve immediately.
