I make these Slow Cooker Flank Steak Street Tacos often and they are great as a party appetizer or dinner for the family. Beyond flavorful, it all starts with this shredded flank steak that can be used in tacos or enchiladas. I like to use El Sol Fire Roasted Salsa that has fire roasted corn, black beans and Hatch chiles.

For the flank steak, I slice it lengthwise and then each strip in half. A sprinkling of chili powder and ground cumin, then some chopped onion, garlic cloves, fresh cilantro and into the slow cooker it all goes. Shred the meat easily after it is cooked and cooled enough to handle. Serve with all the fixings of choice.

I like to add some shredded cheddar cheese on top of each little street size tortilla and pop it in the microwave to melt for 20 seconds. Top with shredded flank steak, more salsa, shredded cabbage, cilantro and maybe a drizzle of some Mexican Crema. A squeeze of lime and you’re set!

I make these Slow Cooker Flank Steak Street Tacos often and they are a great as a party appetizer or dinner for the family. Beyond flavorful, the shredded flank steak can be used in tacos or enchiladas. Nutrition information based on 3 mini tacos servings of meat only. This makes about 24 mini street tacos.

Ingredients 

Instructions 

  • Coat the inside of the slow cooker with cooking spray.
  • Slice the flank steak lengthwise and then each strip in half. Sprinkle the meat with chili powder and cumin. Place the flank steak in slow cooker with onion, garlic cloves and half the fresh cilantro. Pour the 16 ounce batch of El Sol Fire Roasted Salsa over the steak.
  • Cover and cook on low for 6 hours or until done. Remove from slow cooker and shred the steak with a fork. Save the reduced cooking liquid and salsa mixture to serve alongside.
  • Add some shredded cheddar cheese on top of each little street size tortilla and pop it in the microwave to melt for 20 seconds. Top with shredded flank steak, more salsa, shredded cabbage, cilantro and maybe a drizzle of some Mexican Crema.

    This is my kind of meal. I love flank steak, and found some affordable here recently. That may sound strange, but they price these cuts of meat out of the market here. I like to do flank steak with chimichurii, beans and rice, but this would make another great meal, and I do love taco’s. Also, since it’s season here and busy at work, the crock pot needs to come out!

    1. I do love to smother a grilled flank with chimichurri too Cathy. I actually made enchiladas with the balance of this recipe after we had the tacos. Freezing for another evening! Break out that slow cooker and enjoy. Happy New Year too!

  6. I’m all about using the slow cooker this time of the year! And I love a good flank steak taco, too. So combined? Yes, please! I’ll take an order of these tacos to go. Pick up at 4:45pm on the way home from Robbie’s daycare. (That’s 4:45 EST…just to be clear. I want to make sure these tacos are ready on time!) It doesn’t look like we can get El Sol salsa here in our area…bummer because that hot flavor sounds perfect for us!
