For dinner the other night I used their Roasted Garlic & Herb Marinated Fresh Pork Sirloin for this incredibly easy stir fry. Outstanding flavor and it’s gluten free for those watching that!
For this pork stir fry I thought I would shake it up a bit without the usual Asian flavors and made a maple, apple cider vinegar and dijon mustard glaze for the vegetables. As with any stir fry you are going to need to have all of your ingredients cut uniformly to cook quick and evenly. Things move quickly! By only having to slice the already marinated pork sirloin dinner was on the table within 30 minutes.
I sliced up broccolini, asparagus, carrots, red bell peppers, red onion and an apple for a little nod to the Fall flavors in the glaze. This sliced pork sirloin is tender and with the fresh stir fried vegetables, a great change for the family that’s sure to please. The marinated pork sirloin gets a quick sear in the skillet to caramelize and is so tender. I added them on top of the glazed vegetables and dinner was done. I felt they didn’t need to be tossed with the glaze and wanted that marinade flavor to shine through on it’s own.
What I find is most pre-packaged, marinated meats always seem overly salty, Smithfield’s do not. Pork Stir Fry with Maple Cider Glazed Vegetables
- 1.44 lb Smithfield Roasted Garlic & Herb Marinated Fresh Pork Sirloin
- 1 tbsp vegetable oil
- 1 red onion
- 1 large carrot
- 1 apple
- 1 red bell pepper
- 1/2 lb asparagus
- 1/2 lb broccolini
- 1 tbsp vegetable oil
- 1/3 cup maple syrup
- 1/4 cup apple cider vinegar
- 1 tbsp dijon mustard
- 1 tsp garlic powder
- 1/8 tsp red pepper flakes
- 3 tbsp water
- 1 tbsp cornstarch
- Slice pork sirloin in half lengthwise and each half in 1/4 inch slices. Toss with oil in a bowl and set aside.
- Peel onion, carrot and apple and cut into uniform slices. Chop bell pepper into 1/4 inch long slices. Snap hard ends of asparagus off and discard. Cut asparagus into 2 inch pieces. Trim ends of broccolini stems and slice each piece in half lengthwise.
- In a small bowl whisk together the glaze and set aside.
- Get a wok or large skillet searing hot. Add the sliced pork and sear to caramelize for several minutes until golden brown on edges and cooked through. Remove from pan and set aside covered to stay warm.
- Add oil to pan and add the harder vegetables first: carrot and broccolini, tossing to cook for 2 minutes. Add the remaining vegetables and apple and toss to stir fry for 3 minutes. Add the glaze mixture to the vegetables and toss to coat and thicken. Cover with lid and cook for 1-2 minutes.
- Season to taste with salt and black pepper if needed and serve on platter topped with cooked pork slices. Sprinkle with chopped cilantro (optional) and serve immediately.
