Chocolate Chip Truffles

I know, there will be some of you that think a truffle can only be an unctuous, creamy, chocolate ganache filled mound, dipped in chocolate, rolled in powdered chocolate or nuts, but I am here to tell you these nut and date based truffles are out of this world easy AND incredibly delicious.

That was a long sentence…

Big claim I know, but it’s true. Never limit yourself I say and think outside the box. The thought to make these truffles came to me while I was making the tart shells for my No Bake Blackberry Tarts with Blueberry Cashew Cream a few posts back.

This sweet and salty, chewy and crunchy confection is perfect because it’s an all-in-one, pop-in-your-mouth and you’re good sweet tooth fix. Kept refrigerated, they are good up to two weeks in an airtight container. I keep mine in a Ziploc bag for easy grab and go access.

Ingredients and Instructions

Place the almonds and pecans in a food processor and pulse for two minutes to start breaking down the nuts to a meal like consistency.

See how the almonds and pecans are still a little chunky? You don’t want almond and pecan dust.

Remove the pits from the dates and discard. Add the dates, water and kosher salt and pulse again for a minute or two until the dough comes together. Pour this mixture into a bowl and stir in the mini chocolate chips.

This stuff is amazing!  The thought to make these into truffles came to me while I was making the tart shells for my No Bake Blackberry Tarts with Blueberry Cashew Cream last week. I was taste testing this crumb mixture and BAM, the light came on and I figured I would do something different with this base. I swapped out the walnuts for pecans, but it’s the same recipe.

Dip a cookie scoop into a glass of water, shake off excess water and scoop the dough into balls. I use a tablespoon and a half one here.

Press with hand to fill and compact the dough in scoop. Place each mound on a lined cookie sheet that can fit in your refrigerator. Repeat until all dough is used and refrigerate for at least one hour to firm up. This recipe makes 24 truffles.

Remove from refrigerator and dip in melted chocolate. I used Ghirardelli Dark Melting Wafers made for candy making and dipping. They also have milk and white chocolate if you prefer, or use your favorite brand of chocolate.

Place on lined baking sheet and top with sea salt flakes. Keep refrigerated in an airtight container until serving.

This is one super easy and delicious little treat.

The simplistic nut and date mixture really holds up well and the mini chocolate chips work. I would like to see maybe some dried fruit and white chocolate chips in my next batch. These were a big hit and I hope you enjoy!

These pecan almond Chocolate Chip Truffles are a confection of ground almonds, pecans, dates, chocolate chips then rolled and dipped in melted chocolate. Prep time includes 1 hour refrigerating the dough.

Ingredients 

  • 1 cup raw unsalted almonds
  • 1 cup raw unsalted pecans
  • 8 Medjool dates pits removed
  • 1/2 tsp salt
  • 2 tbsp water
  • 3/4 cup mini chocolate chips
  • 12 oz chocolate for dipping
  • sea salt flakes

  1. These look delicious. Dates are a great idea. I think I will try them with the method you use for your chocolate truffles. spread them out in a pan, and cover with chocolate on the top and sprinkle with the salt. Cut just before the chocolate hardens to get cut. Thanks.

    I am not one of “those” people!! One of the best truffles I’ve ever had was made with dates. I love this, it’s like a energy-food truffle! Less guilt, all the flavour AND texture too! (And I love the extra choc chips I get in it)
