I don’t know about you, but the Sweet Tooth Fairy swarms around me in the evenings and requests and requests to be fed. Enter these No Bake Chocolate Peanut Butter Crunch Bars!

I do try these days to be better and have a little more self control, but really everything in moderation, right? I mean I can eat only so many apples and yogurt and then the chocoholic cravings just need to be fed!
My recipe has peanut butter. It has chocolate. It has crunch. OK? Interested? I was and I added a few more goodies like oats and cinnamon. Fantastic texture and sweet appeal, and instead of cutting them into bars I cut 36 squares out of this batch. One or two of these bad boys and I’m good to go.
The other cool thing? You melt the chocolate and peanut butter, mix it with the dry ingredients and pour it in a pan. THEN it’s in the refrigerator, no baking required. Simple. Easy. Delicious.
I served these guys right along side my Orange Sesame Seed Brittle (Simsemieh) on the dessert tray for Super Bowl Sunday and they were all gone rather quickly.
Let’s get started…

In a microwavable bowl add the sugar, honey and peanut butter. Microwave for about 2 minutes, stirring every thirty seconds until it is smooth.
Add the chocolate chips and stir until melted.

In a bowl mix together the corn flakes, oats and cinnamon.

Pour the melted peanut butter and chocolate mixture over and with a spatula stir to coat completely.
Pour into a parchment lined 9” square pan. Press the mixture evenly into the bottom and corners of the pan, smoothing out the top.

Chill in the refrigerator until firm, about 3 hours.

I prefer to use parchment paper so I can easily lift out the chilled No Bake Chocolate Peanut Butter Crunch dessert and cut them right there on the paper. Easy, peasey.

Feel free to slice them into long bars or use a larger pan for taller or thinner bars.
Store in an airtight container in the refrigerator.

- 3 cups corn flakes
- 1 cup oats
- 1 tsp cinnamon

I am totally behind the no-bake aspect of these bars, Kevin! Anything that looks this good AND is no-bake needs to be in my recipe box. Oh, and I’m intrigued by the dash of cinnamon in these bars. I sometimes put cinnamon in my chocolate cake, but I’m not sure I would have thought about cinnamon with peanut butter. Sounds awesome!
