These delectable blondies are the perfect comfort food sweet tooth fix. Filled with butterscotch, chocolate chips and little mini marshmallow bits you can’t go wrong.
Seriously these are a favorite go to for a bar type cookie. They are quick to make, start with a simple base and you can add whatever you like to them be it dried fruit, any kind of chocolate chip, chopped candy bars or the like.
The wonderful and often little used butterscotch gets highlighted in these blondies. What’s special about these too are the tini tiny marshmallow bits that kind of melt inside the blondie. They remind me of the little marshmallow bits you would get in cereals as a kid. I was never a sweet cereal kid, I like Shredded Wheat, Corn Flakes and Corn Puffs, weird huh? But as an adult I like the sweets, so I need to be careful.

So let’s get these guys going. Preheat your oven to 350° F and line a 9-inch square baking pan with parchment paper, leaving an overhang on the sides to lift the finished blondies out.
Mix together the dry ingredients: flour, baking powder, baking soda, and salt. Set aside.
In a separate bowl, blend the melted butter, brown sugar, and vanilla together until combined. Add egg and mix well.
Slowly add in the dry ingredients and stir together. Fold in the marshmallow bits, butterscotch and chocolate chips. The batter will be super thick. Spread evenly into prepared baking pan using a rubber spatula dipped in water if needed.
Bake for 20 minutes or until lightly browned on top. Remove from the oven and allow to cool completely before cutting into 12 squares.
Marshmallow Butterscotch Blondies

- 1/3 cup unsalted butter melted
- 1 tbsp vanilla extract
- 1 large egg
- 3/4 cup butterscotch chips
- 1/4 cup chocolate chips
- 1/2 cup marshmallow bits

Hey Kevin! Question – when you say marshmallow bits do you mean mini marshmallows? I have not seen “bits”, although I could make minis into bits.

Hey Kevin! Maybe it’s where I live, but I have never seen these – I’ll just improvise! When my kids were little I would not buy cereal with marshmallows or chocolate – they pleaded and I wouldn’t do it!, but now that they are grown they don’t eat them either! One for Mom!
