How was everyone’s weekend? Gearing up for the holidays, I’ve been thinking of different meals to share with you that are quick to put together and are packed with flavor because we all get a little side tracked with busy schedules.

We love this one because with the rotisserie chicken you can pick up at Costco or your favorite market, this comes together rather quick. Tender chicken is sauced in a apple cider vinegar flavored pan sauce that is just poppin’ with flavor.

I use rotisserie chicken meat to speed things up. Pan fried, golden brown, red potatoes are glazed in an apple cider vinegar pan sauce with crumbled bacon and chopped green onions. Mixed with the chicken and you have an incredible, tasty dinner. Comfort in a bowl.

I start off with rendering some bacon to crumble. With a little of the bacon fat, in go the red potatoes to brown and get all crispy. Can you smell it?

Setting the potatoes aside, I make a quick pan sauce by cooking some flour in with the bacon fat, deglazing the pan with the apple cider vinegar to pick up all the little bits, then add a little chicken stock.

This sauce is simple and so tasty. Lots of chopped green onions go in the mix,  the potatoes and chopped breast meat get tossed in and you are ready to serve. Not just relegated to a side dish, these potatoes become a meal. Enjoy!

I hate to admit, I’m jealous. My little island has no Costco and rotisserie chicken is hard to come by? Now I want to go in search of one to make this! Like everyone else, I love German potato salad then either chicken, delicious. Maybe some German chocolate cake to go with? Low carb of course?

    1. I like your thinking about that German Chocolate cake, it’s been ages since I had that! I would do a quick sauté of two chicken breasts and dice it up instead Cathy. Nothing stops me from a good meal. 🙂 Have a wonderful weekend!

What are you doing to us, Kevin? It’s so cruel. These potatoes looked amazing back in 2016. And you know what? Nothing has changed – this still looks fantastic! Please, if you next time decide to update the post, ship some potatoes at the same time:)

  3. This was a good one, Kevin! Nothing like those rotisserie chickens for convenience! We had about 65 cm of snow (or two feet) the past two days to this would be perfect right now! I’m sure hubby would love this after coming in from snow blowing! Tatos + chicken = the best comfort food 🙂 Have a great weekend, my friend!

    1. 2 feet in 2 days… wow! I have always lived West Coast and snow living is so foreign to me with salted roads, snow blowers and I would be terrified of skidding the way I drive. Think I’ll stay here (although we are considering the move to Portland soon). I want elbow room and it’s time. 😉

  4. Watching the video made me seriously hungry and it is not even lunch time yet 🙂 What a great midweek quick dinner and I love the addition of rotisserie chicken in your recipe!

    1. I think besides the flavors, how quickly this comes together is why I make it a go-to so often. Have a great weekend Miriam!

  5. Oh my God, that looks like real comfort food! I love German potato salad, but with chicken? And it’s best friend, bacon? Hell yes.

  6. Oh goodness, I remember this deliciousness from back in the day!!! I’m SOOO glad you reposted this Kevin, because OMG, this looks like it would totally hit the spot right now since it’s dreadfully dreary outside. GIMME all those crispy ‘taters and chicken!!!!! YUM! Cheers, buddy!

    1. I’m with you, it’s so windy and we’re supposed to get crazy rain this weekend so this might have to make an appearance here again… because, you know. Bacon. 🙂

  7. Kevin am so glad you updated this recipe (LOVE the video btw) because I missed it the first time you posted it and can I just say, to me, bacon + potatoes = chocolate + peanut butter = matches made in heaven!
This is pure indulgence for me – thanks so much for sharing!

    1. Thanks so much Shashi, glad this one caught your attention! Yes, videos are new for the site in 2017! I’m with you on both of those matches made in heaven, two of my favs, too!
