Easy Mexican Watermelon Salad

Talk about refreshing! This Mexican Watermelon Salad is a spin on my Mexican Grilled Corn, and with only four ingredients, it’s made in minutes! It’s the perfect fruit salad to bring for any Summertime picnic, potluck or your weekend barbecue!

Mexican Watermelon Salad

Ice cold, cubed watermelon is refreshing, but I like to spice it up and add a few simple, on hand ingredients and this fruit salad gets elevated. I served this the other evening alongside my Ground Beef Enchiladas and Cilantro Lime Rice.

What’s in a Mexican Watermelon Salad?

I use seeded watermelon cut up into 1 inch cubes. Fresh lime juice and zest are added to coat the watermelon and chili powder gets dusted on top. Stir together to mix and crumble cotija cheese on top before serving. That’s all there is to this beauty!

It’s a great fruit salad that comes together in no time and is a surprising hit every where I bring it.

What’s a Mexican Watermelon Salad taste like?

You have the sweetness coming from the watermelon, the tang from the lime juice and the hint of heat from chili powder.

I like to make my own Homemade Chili Powder, but feel free to use your favorite.

The cotija cheese adds the element of saltiness and the combination is fantastic.

Can this Watermelon Salad be made ahead of time?

Yes. I make it up to the point of adding the cheese. Just keep it separate until ready to serve.

Easy Mexican Watermelon Salad

This Mexican Watermelon Salad starts with chilled, cubed watermelon tossed with lime juice, chili seasoning, crumbled cojita cheese and zest! It's the perfect fruit salad to bring for any Summertime picnic, potluck or your weekend barbecue!

Ingredients 

Instructions 

  • Cube watermelon into 1 inch pieces.
  • In a bowl add the watermelon, lime juice, kosher sat and chili powder. Toss to coat and refrigerate for at least 1 hour, covered.
  • Crumble cotija cheese over salad and the zest from 1 lime before serving.

Notes

I’m using a small round watermelon for this, but if you use a large, oblong sized watermelon, I add extra cheese. Season to taste.

    1. Hi Kathi, I’m using a small round watermelon for this, but if you use a large, oblong sized watermelon, I add extra cheese. Season to taste. Calories coming from the cheese, so use per your discretion.

      1. But a primarily watermelon salad with just a quarter cup of cheese, divided between 6 servings? The calorie count seems way too high per serving. By the way, it looks delicious and I will be making it this weekend!

      2. Most recipe sites use a programmed plugin to calculate the nutritional information. I do, and hopefully it’s calculating correctly! Like anything, use your own judgement. Have a great holiday weekend, too. 🙂
