Sadly I guess I missed posting this for Waffle Day, which I read was Monday. But who needs a day to enjoy these Date Honey Bran Waffles, am I right? Any morning is a good waffle breakfast to me and these are exceptional.
These waffles are hearty, not your light and fluffy variety, but definitely not too heavy and filling. The sweetness from the honey and dates comes through beautifully. Toasted to perfection, the melted butter on top is the best. I also added buttermilk instead of regular milk to give this a little tang flavor.
See I didn’t have enough wheat flour and decided to mix in the bran. What a great idea if I say so myself! The waffles aren’t too dense and have a wonderful texture. The buttermilk counters the sweet honey and dates, which is exactly what I was looking for so win, win there.
Topping this off I decided on peaches. I diced these fresh peaches and then mixed them with honey, lemon and a little cinnamon. I love the peach cinnamon combination and with a little whipped cream on top, makes a fantastic breakfast.
Perfecto, with a few slices of crispy bacon of course!
Dice the peaches and combine with honey, lemon juice and cinnamon. Set aside. Next, sift the flours (optional) into a large bowl. Add the bran, brown sugar, baking powder, salt, baking soda and whisk to combine.
In a blender add the buttermilk, honey, dates, melted butter, eggs and vanilla. Pulse to blend for a few seconds to blend, but you don’t want it foamy and whipped.
Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir to combine and make a smooth batter.
Season waffle iron with cooking spray and make waffles per manufacturer’s instructions. Top with butter, peaches and whipped cream. Enjoy!

Date Honey Bran Waffles with Peaches
Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1/2 cup coarse wheat bran
- 2 tbsp brown sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp baking soda
- 1 1/2 cups buttermilk

- 5 dates pitted
- 1/2 cup butter melted
- 2 eggs
- 1/2 tsp vanilla extract
- Topping
- 1 peach pitted and diced
- 2 tbsp honey
- 1/2 lemon juice only
- 1/2 tsp cinnamon
- whipped cream
Instructions

Love this recipe so much! It’s even better than the white flower recipes I’ve tried. Instead of honey I used molasses and since I didn’t have dates, I used dried cherries. I only wish I had nuts. This is a perfect fit for me because I need more fiber. I can’t thank you enough 🙂

I love these anytime actually, I believe you can wafflize anything like my Cinnamon Roll Waffles, Hash Brown Waffles, Thai Shrimp Waffle with Spring Salad, or my favorite Cranberry Pecan Stuffed Waffles with Turkey Mashed Potatoes and Gravy. 🙂
