Dark Chocolate Fruit Bites

If you’re like me, you probably have a specific go-to treat in the candy aisle, (hello Snickers bar!). When it comes to chocolates, there are countless shapes, sizes, flavors, and textures available to us, but we all tend to know where to find our favorite combinations. However, if you’re like me, you also know that there’s something special about getting to create your favorite foods all by yourself, like making a classic seasoning mix or chocolate ice cream right in your own kitchen.

That’s why I created a foolproof homemade fruit and nut chocolate recipe that reminds me of the scrumptious mendiants I splurge on when the cravings hit. Making these bite-sized treats at home is cost-effective, incredibly easy, and lots of fun! Top homemade chocolates with anything you’d like to and package them up as a heartfelt gift — or keep them handy in your refrigerator to enjoy anytime.

Homemade chocolates

In the ingredients below I listed what I used, but feel free to use whatever dried fruits and combination of nuts you prefer. Dried pineapple, cranberries, blueberries, raisins, etc.

INGREDIENT NOTES AND SUBSTITUTIONS

  • Dark Chocolate – Melted dark chocolate (look for the 60 to 70% cacao) is the basis for these fruit and nut chocolates. It’s actually packed with nutrition and makes a perfect complement for sweeter toppings like fruits or caramel. If you prefer, you can melt white or milk chocolate for this recipe.
  • Chopped Walnuts & Pecans – Chopped nuts add some wonderful crunch and nutty flavor, especially when toasted. Use any chopped nuts you’d like for this recipe, including almonds, hazelnuts, macadamia nuts, or pistachios.
  • Pumpkin Seeds – For an extra layer of salty nuttiness that pairs perfectly with dark chocolate!
  • Dried Cranberries – Use any dried fruits of your choice, including cherries, açai berries, raisins, pineapple, or blueberries. Fresh fruits won’t work as well when the chocolate sets.
  • Candied Ginger – I like this as a satisfying, sugary-sweet topping, and the ginger adds a bit of zing to each bite. Use candied nuts instead if you’d like!

HOW TO MAKE HOMEMADE CHOCOLATES

  1. Toast The Nuts. Spread nuts on a sheet pan and toast them in the oven at 350°F for five minutes. You don’t want them to get too dark — just lightly browned and fragrant.
  2. Chop Your Toppings. Give your dried fruits and candied ginger a rough chop to break them into small chunks.
  3. Melt Chocolate. In a microwave-safe measuring cup, melt your chocolate at half-power for one minute and give it a good stir. Continue to microwave in 15 second intervals, stirring between each until there are no lumps.
  4. Prepare Your Molds. Spray a silicone ice cube tray with non-stick baking spray. Divide the melted chocolate into the ice cube molds and sprinkle your dried fruit and nuts on top.
  5. Refrigerate. Place ice cube trays in the refrigerator for at least two hours, until the treats are firm and solidified.
  6. Remove, Serve & Store. Pop the hardened fruit and nut chocolate pieces out of the ice cube trays. Store in an airtight container at room temperature or in the refrigerator to keep longer.

Is Dark Chocolate Healthier?

Dark chocolate contains lots of beneficial antioxidants, which can be good for fighting heart disease and lowering blood pressure. Plus, making fresh, homemade chocolates yourself means you know there’s no artificial ingredients or fillers!

What Toppings Go Well With Dark Chocolate?

Dark chocolate features a bit more of a robust, slightly bitter flavor than creamy, sweet milk chocolate does. Therefore, it pairs well with sweeter toppings like caramel sauce, coconut, and dried fruits such as apricots, strawberries, or bananas.

Salt also helps bring out the sweetness of dark chocolate while masking its bitterness, so toppings like sea salt flakes, pretzels, nuts, and even spicy cayenne pepper are great complements. There’s a reason they are commonly found in dark chocolate mendiants!

What Are Mendiants?

A mendiant is a traditional French confection composed of a chocolate disk studded with nuts and dried fruits. Mine are cubed due to the molds, but feel free to find other molds online.

How Long Will Homemade Chocolates Last?

If stored at room temperature in an airtight container, mendiants will last up to three weeks. In the refrigerator or freezer, they can last several months!

Made these last year. They were great. Forgot about them for this year, thanks for the reminder, as I was taking about something like this The only addition I made to mine was candied orange peel and non-crystalized ginger. I like the pretty fruity. I will get out buy chocolate this weekend and go at them again. Thank you and happy holidays!

  3. This is brilliant, Kevin. Incredibly versatile and actually really pretty. And how easy with the silicone ice cube trays!

    1. Thanks Marissa! You are too kind, as gifting these never crossed my mind! I might need to take a look at that! 🙂

  4. Hey Kevin! Marissa just did a candy post and now you, so I guess I’ll be making candy this weekend!! Fruit, nuts and chocolate and good for you…win, win!! I have some silicone mini muffin cups that I think will work perfectly. Try to stay cool over the weekend!

    1. Thanks Dorothy! Pretty much everything one has already in their pantry, right? I have those muffin cups too, aren’t they great. Such a smart idea to make them from silicon. Hello to Gary and you guys have a fun weekend. Just made some no churn ice cream and picked a watermelon for the weekend heat! 🙂

Kevin, your timing of this post is perfect. I have every ingredient in my house right now and health conscious house guests arriving for the weekend. Funny about the dried fruit comment. I have tons of candied ginger left over from a recipe and assorted dried fruits in the cupboard as well. Love these beauties! And since my Dave is a connoisseur of the best and darkest chocolate (100% is his favorite), he’ll approve, too. This is about the third recipe I’ll be making of yours for the weekend, BTW. 😀 The weekend guests are coming for a family wedding and we’re hosting a pre-wedding party on Saturday. Have a great weekend, my friend!

    1. Reading this makes me smile, so happy I rate that high to get three recipes on your dining table this weekend.! 🙂
Candied ginger, macadamia nuts and dark chocolate are a fantastic combination by the way. Just sayin’. Have a wonderful time at the pre-party and wedding Sally!

  7. As if I need an excuse to eat chocolate, Kevin! Antioxidants you say? Well, if I gotta eat the chocolate, I guess I have to 😉 I’ll suffer it out, lol 😀 I know what you mean about your intentions of buying dried fruit don’t match your intake. I see bags of dried fruit in the grocery and think I’m easily gonna use it up, but never do, This is a great way to use up odds and ends of stuff in my pantry. Great recipe! Have a great weekend!!

    1. It’s so true. While Dave is more a fruit cobbler, lemon bar kinda guy, I am definitely the one who looks straight at a restaurant’s dessert menu when I get there. Where’s the chocolate and how did they use it. 🙂
Make some up this weekend and enjoy before a hike or gardening. Cheers!

  8. Kevin, I so love the idea of these little Dark Chocolate Bites – though, I have no clue how I’d stop at one as I am a die hard chocoholic and all of it’s benefits is the only way I can justify my consumption of it 😉
Currently, I have 4 bags of a variety of dried fruits hanging out in my pantry and this is the perfect way to put them to good use! Thanks so much for the inspiration and hope y’all have a wonderful, cooler, weekend!

    1. I know, who was I kidding with one, right?! Two actually did the trick an dI found dark chocolate THE best to counter the fruit, though any chocolate be it semi sweet to milk is a winner here. Use up those bags of dried fruit! Hope you and your daughter continue your Summer adventures! 🙂
