These Chocolate Chia Mousse Parfaits totally hit the spot when I wanted chocolate mousse and went the healthier route instead. Mind you chocolate mousse is definitely one of my favorite desserts and as a chocoholic, it is in my top five.
These little lovlies are so dang good. So good in fact I bet your kids will never know what the secret ingredient actually is, and that it’s good for them. Oh, and the other cool thing is these can be made so quickly. It’s all mix, refrigerate and layer. Easy peasy, right?
These parfaits are made with coconut milk, chia seeds (my secret ingredient!) and some delicious dark cocoa powder. One little Stevia bumped up the sweetness and I was in heaven. What I really like about this new version of soaking chia seeds as a dessert compared to when I made my Raspberry Lime Chia Puddingis the difference in the coconut milk itself. I used a brand called Thai Kitchen Coconut Milk instead of my go to dairy free coconut milk beverage. My guess is the fat content. 🙂
This version came out mousse like in texture and consistency compared to the other, which was more of a pudding and a little looser. Both are incredible to me, but with the incorporation of the dark chocolate, it gave me the feeling I was really cheating it tasted so rich, and I loved every delicious mouthful.
I thought about layering this with whipped cream and decided to flavor it up with some orange. I think it elevates the whipped cream and I added one Stevia packet to the whipping cream and orange extract to give it a slight sweet and citrus essence.
I layered granola in the mix. It adds that crunchy texture that was perfect foil to the rich and creamy chocolate chia mousse. Use store bought or homemade granola, like my Basic Vanilla Granola, Tropical Granola or my Chocolate Pecan version.
Believe me, you’re gonna love this one.
- 2 cups coconut milk
- 1/3 cup chia seeds
- 2 tbsp cocoa powder
- 2 Stevia packets
- 1 cup vanilla granola
- 2 cups whipping cream
- 1 tsp orange extract
- 1/2 cup pomegranate arils optional
- Whisk together the coconut milk, cocoa and chia seeds in a large bowl. Mix well, cover and refrigerate overnight or at least 5-6 hours.
- Chill a bowl to whip the cream in the freezer for 10 minutes. Add the whipping cream, orange extract and other stevia packet. Beat on high, mixing until peaks form.
- Layer a scoop of granola, then the chia pudding then whipped cream into each glass dish, repeat. Do this for each, stacking the ingredients. Serve immediately, chilled and top with pomegranate arils.
