This Slow Cooker White Bean Soup is perfect on it’s own, but with added beef kielbasa sausage it makes for a heartier meal. Grilled or pan seared for that added caramelization flavor, plus a touch of fresh pesto tops it all before serving. If meat isn’t in your diet, simply omit and this is still one killer meal. Just don’t skip the pesto!

I personally LOVE a good bean soup. This one is no exception and don’t let the fact that there are minimal ingredients. There are flavor weapons hard at work in this one.

Here in San Diego the weather has actually been changing. Yes, you read that one right. It’s cold in the mornings and evenings with it getting dark early. So  this is a good one to come home to after a long day. The slow cooker is perfect for meals like this.

I grill the beef kielbasa (or sausage of choice), but feel free to add grilled chicken or no meat at all. I love the grilled flavor in the soup, it adds another dimension in flavor. If grilling isn’t an option, slice and pan sear to get that caramelization going.

Another ingredient that adds a wonderful touch and are highly overlooked are chopped celery leaves. These are so delicate and I often add them to salads, too. Just a little sprinkling of them after you ladle the soup in the bowl should do the trick.

The other flavor bump in this one is to top each bowl of soup with a tablespoon of fresh pesto. This herbaceous cheesy touch picks the white bean soup up to another level. Don’t skip this, it’s the best.

Slow Cooker White Bean Soup with Sausage

A tried and true family recipe for white bean soup. I add beef kielbasa sausage, grilled and chopped for a heartier meal. A touch of fresh pesto tops it all before serving.
Servings: 8 servings
Prep: 15 minutes
Cook: 6 hours
Total: 6 hours 15 minutes

Ingredients 

Instructions 

  • Soak the beans overnight in water covering the beans by 1 inch.
  • Drain the water from the beans, rinse and add chicken stock to beans in slow cooker.
  • Add the chopped onion, carrot, celery and garlic.
  • Cook for 6 hours in slow cooker or until beans are soft, but not mushy (See Note 1).
  • Grill kielbasa, when cool enough to handle, slice into 1/2 inch pieces and add to slow cooker in last hour of cooking (See Note 2).
  • Season to taste. Add tablespoon of fresh pesto on top of each bowl of soup before serving.

Notes

1. At this stage it can be seasoned to reflect whatever type of soup you want, be it French with thyme and tarragon, Mexican with cumin, Italian with Italian herbs, etc.
2. You can slice the kielbasa and pan fry to sear and caramelize edges if a grill is not an option.

  3. This is just the perfect recipe for this week – we have the week off to prepare to host Christmas at ours this year and it is just lovely to have a good hearty meal that almost cooks itself. Love the caramelization flavours in the soup and beans are always a winner in my house 🙂

    1. Thanks Miriam. We had the big family to do up in Portland area this year with 16 one night and 12 on Thanksgiving day itself. So we are low key and will be taking the dogs up to Mt. Laguna to hike Christmas morning and come home to a dry rubbed and smoked turkey with all the trimmings. I missed my turkey leftovers from Thanksgiving dinner since it wasn’t here in San Diego. Have a wonderful Christmas with family friend. 🙂

    The weather here has been weird too! Seriously, it was in the 20’s on Friday and then in the 70’s yesterday, then today it’s cold as heck again. Like, hellllllo..   5. Hey Kevin! This is just what I need! Our temperatures have taken a severe dump…we actually had a dusting of snow yesterday…burr!! I make a somewhat similar soup which has kale in it. I totally agree with you about celery leaves, they are so good! I wish I had a big bowl of this right now!

    1. Thanks Dorothy. It’s dipped here and is 40°F in the mornings and we use the heater now. I know it’s not anything like what you and the East coast get temperature wise, but when you have 75-80° and then it goes to 40° it’s quite the dip! Hello to Gary!

We have taken the boys up there every Christmas since we got them and they run and play in it like it’s a strange thing. I throw snow balls in the air and they jump, bite and wonder where it went.   8. I love bean soups too, with or without meat! They’re a favourite around here for sure. Love the pesto addition! I always use my celery leaves too…so much flavour! Waste not, want not, right 🙂 ? It was super cold here again this weekend and the wind was blowing like crazy so this would have been perfect.
