These creamy, textured Pumpkin Cheesecake Parfaits are the perfect Fall dessert. Easy to put together (15 minutes!), these sweet and cream cheese layered parfaits have vanilla granola and whipped cream to satisfy any sweet tooth.

It’s been hot as Hades down here in San Diego lately and the oven was the last thing I wanted to turn on this weekend. What I wanted was a cheesecake of sorts, but with pumpkin recipes abounding left and right I felt the need to share one of my own.

Who needs a baked pumpkin pie, or cheesecake when you can have the best of both in an individual sized dessert, right?  This layered parfait brings the tasty pumpkin to the forefront and combines the purée with cream cheese to blend into one perfectly flavored dessert.

Pumpkin Cheesecake Parfaits

The tangy flavor from the cream cheese works well with the pumpkin spices and the texture is so creamy. A nice vanilla granola works for a little crunch. The cool part about these is they can be made in about 15 minutes because there is no cooking necessary, the pumpkin purée has already been cooked. All you do is mix, layer and refrigerate to set. Good stuff!

How to Make Pumpkin Cheesecake Parfaits

In the bowl of an electric mixer or mixing bowl, whip the heavy cream until stiff. Remove 1/3 for topping and set aside, covered in refrigerator. In a separate bowl, beat the cream cheese until fluffy. Add the brown sugar and pumpkin purée and continue to mix until creamy. Add the vanilla, cinnamon, ginger, nutmeg, cloves and salt and beat again for 2 minutes.

Fold the pumpkin purée in with the whipped cream using a rubber spatula. Mix thoroughly to incorporate completely.

Layer some of the granola, then the pumpkin mixture, then whipped cream into each glass dish, repeat. Do this for each, stacking the ingredients. Repeat and top each with a dollop of whipped cream and a sprinkle of ground cinnamon if desired. Keep refrigerated until serving. Enjoy!

    What a delicious dessert, eh?! Besides, it has pumpkin and granola. I mean, pumpkin and granola are the healthy choices, right? So I can have two glasses of this dessert! Wait…I’m not on a diet today – pass me all, please:)

    I think I need to give yours a try because it looks just too good to pass up!

  4. Hey Kevin! What a nice change from pumpkin pie (not that there is anything wrong with pumpkin pie)! My son’s two favorite desserts are pumpkin bars with cream cheese frosting and cheesecake. I will be forwarding this recipe to him. BTY I assume the granola is of your own making – recipe please. 🙂

    1. Thanks Dorothy, they are quite delicious. Sadly because they are small I think I can eat a lot, but beware!
      As for the granola, I have a couple varieties here on the site. It’s a vanilla almond one. I give a basic recipe and you can alter to your liking with other nuts etc.

You could send some of that our way if you’d like…we were mid-30’s this morning. mid-30’s! And the weather guy is calling for a mix of rain and snow on Saturday. What-the-what?       Doesn’t the weatherman, or should I say weather person, have the best job? It apparently doesn’t really matter if your wrong, it’s out of their control. Here they usually say it’s 74° and blue skies, lately it’s been a dreadful and draining 90° + everyday and fires popping up everywhere. Stay warm out there, I’m going to turn on my solar powered air conditioner – guilt free! 🙂
