Watermelon Lime Drink

Simple combination, great flavor and it’s fun!

  • 2 cups cubed, seeded watermelon
  • 1 cup of Sprite or any lemon/lime soda
  • 2 tbsp fresh lime juice
  • 1 cup ice cubes

Place the watermelon in the freezer about an hour until firm. Remove from freezer and place in a blender along with the soda and lime juice. Blend until smooth, add the ice cubes and pulse until chopped and mixed thoroughly.

In my backyard I have a Mexican lime tree that is on overload in producing the small yellow limes. They are extremely juicy and combined with one of my favorite herbs cilantro, makes for a great marinade for a grilled steak.

  • 10 Mexican lines, juiced
  • 1 bunch cilantro
  • 1 onion
  • 2 tbsp vegetable oil
  • 1/2 cup sliced jalapeno rings
  • salt and freshly ground black pepper
  • 1 lb skirt steak

In a food processor add the quartered onion, juiced limes, cilantro, oil, salt, freshly ground black pepper and jalapenos. Blend this mixture until smooth. Pour this mixture into a Ziploc bag and add the skirt steak pieces. Zip up and let marinate at room temperature for at least 2 hours. Grill to your desired liking and serve with rice and a fresh salad.

This is another recipe made with fresh ingredients to create a simply delicious dinner. Made with fresh sea bass (or frozen from CostCo, which is a great source) that has been marinated in spices and grated lime. Add a spicy fruit salsa over the top of the grilled fish with a side of steamed vegetables and you are good to go.

Fruit Salsa

  • 2 cups of fresh strawberries
  • 1/2 cup chopped red onion
  • 1/2 cup diced green bell peppers
  • 2 tbsp vegetable oil
  • 1 lime
  • 2 tbsp chopped jalapenos
  • 1/8 cup freshly chopped cilantro
  • 1 tsp of sugar
  • salt and freshly ground pepper to taste

In a mixing bowl whisk together the oil, juice from lime and sugar. Add the strawberries that have been rinsed, green tops removed and diced small. Chop the red onion, dice the green bell pepper and add to the bowl along with the remaining jalapenos and cilantro. Set aside to marinate for at least a half an hour.

Sea Bass

  • 2 8oz sea bass fillets
  • 1 lime
  • 1/4 tsp cayenne pepper
  • salt and freshly ground pepper

Grate the zest off of a lime and set aside. On a platter pour lime juice over top of each fillet. Crumble the lime zest over each sea bass filet and season with the salt and pepper. Top each with cayenne pepper. Let marinate for 15 minutes and start the barbecue. Grill each side for 4 minutes and top with fruit salsa. Serve with steamed vegetables seasoned with fresh tarragon and salt and pepper to taste. I tend to use fresh bell peppers, zucchini and celery as a combination.

Mexican Peanuts

I’ve seen these at Whole Foods and other markets, but wanted more flavor so I decided to create my own. Besides my other recipe for the Spiced Pecans these are a great snack and easy to make.

  • 1 1/2 tbsp fresh lime juice
  • 1 1/2 tbsp vegetable oil
  • 2 tsp ground red chili
  • 1 lb shelled raw peanuts
  • seasoning salt to taste

Preheat oven to 275˚. Mix the fresh lime juice, oil and chili in a bowl. Add peanuts and toss to coat. Place nuts on a cookie sheet and bake in oven for 15-20 minutes until golden in color. Let cool and store in an airtight container.
